A Crunchy Brown Rice Salad recipe

Hi. This weekend I was able to spend time with treasured friends up at beautiful Peregian Beach on the Queensland Sunshine Coast. The weather was lovely and we had a fabulous couple of days.

It was really great to spend some quality time, relaxing. Life is short and I think that it is essential to take the time to de-stress. It’s even better when you do it by spending time with people who are important to you.

With no research to share this week, I thought I would share another recipe.

I came across this Rice Salad recipe some time ago and adapted it to suit our tastes. I have made it several times for barbeques and parties and it always gets rave reviews.

It is really simple, quite tasty and nutritious.

 Crunchy Rice Salad – serves 4 to 6

3 cups cooked rice, cooled – I like to use a Mountain Blend as it has a nice tasty mix of rice

300 grams of Pumpkin or Sweet Potato (cooked and cut into small pieces)

½ cup chopped Parsley

2 green shallots finely sliced

½ cup finely sliced Snow Peas

½ cup Bean Shoots

1/3 cup toasted Pepitas/Pumpkin seeds

3 tbsp toasted Sunflower seeds

Dressing

1 clove of garlic crushed

1 tbsp sesame oil

1 tbsp olive oil

1 tbsp soy sauce

2 tbsp lime juice

Method

I like to cut my sweet potato or pumpkin into thick slices and cook them under the grill so it gets a bit of dark caramelisation for added flavour.

While the potato or pumpkin is cooking – put the rice into a large salad and mix the dressing ingredients together in a jug.

Chop the cooked slices into small cubes and put it into the bowl with the rice and other ingredients.

Combine the ingredients gently with a large spoon.

Pour the dressing over the salad and give the salad another mix to incorporate the dressing.

 

This is great as a side dish or you could even have it as a main meal.

The body’s defense system and allergies

Today I thought I would write about the body’s defense system and how it reacts to toxins and allergies.

Scott and I try to eat unprocessed, real foods as much as possible. However, there are times when we are out and have a meal that is not ideal and this is normal in every day life. Moderation is the key.

The issue that I have, is that occasionally after eating some things, I end up with a runny nose for the next hour. Sometimes I wake up with sinus congestion.

Quite some years ago, I always had a runny nose. I would always be carrying tissues with me. I thought it was a hereditary thing, as my grandmother was the same. It was only after going on a low carb diet for a while, that I noticed the runny nose seemed to go away.

I did a bit of research into this and found out that this issue has a name ‘gustatory rhinorrhea’. It was also a relief to find out that this condition is not unusual.

 

So, what is ‘gustatory rhinorrhea’?

 

Quite simply it is a ‘runny nose while eating’. The most common explanations for this is a food allergy, the temperature of the foods or hay fever.  A common symptom of a food allergy is sinus complications. According to MedlinePlus.gov, if you have a food allergy, you can develop nasal congestion, a runny nose and excessive sneezing. The most common food allergies are to fish, nuts, peanuts, soy, wheat, eggs and milk. The runny nose is the result of irritation and inflammation in the sinus cavity from increased levels of histamine.

When you eat something you’re allergic to, your immune system malfunctions and fails to recognize the proteins in the food as safe. The body goes into defense mode, producing antibodies and histamine. These two agents are intended to protect the body from viruses, bacteria and infection. Too much histamine in the sinus cavity leads to a runny nose.

 

This leads to another part in the body’s’ defense mechanism, mucous.

 

The fluid around all your cells is called lymph fluid. It moves waste products through various lymph channels and nodes. Your lymph is more active at night while it orchestrates housecleaning.

When your lymph is clogged your body looks for alternative ways to get rid of trash. Plan B is making mucous out of it. Lots of mucous in the morning is a sure sign of a problem. Regular drainage during the day or after eating a meal, are other signs of trouble.

This is why when we contract a virus, like a cold or flu, we suffer primarily from a runny nose. The body is doing its utmost to get rid of the trash, by creating mucous.

Personally, through the process of elimination, I have found that usually most processed wheat products trigger this immune response. This was 1 of the contributing factors to change our way of eating.

I continue to find it fascinating, how our bodies heal themselves.

Iridology – reading the eyes.

I recently attended a workshop that was really interesting so I thought it was time I wrote a post for the blog.

Irises, eyes

Learning about my eyes

One of my lecturers from college held an Iridology workshop in her home and I was lucky enough to be invited. Iridology is the study of the eyes to help determine health, although I have discovered it is so much more. I have had photos of my eyes taken by a student naturopath at the Endeavour College Clinic. The lecturer was able to read my eyes from them. What she was able to discern from my eyes just blew me away. This is a person who only knows me as a face in a classroom, but she spoke about me like she had known me all my life.

What I learned

You see Iridology looks not just at your physical health but your personality too. I don’t mean that it is some kind of psychic thing but rather a way of reading your eyes. Then using this knowledge as a way to make better decisions regarding health. For example it was determined that I have a strong constitution, these are graded from 1 to 5, I am a 1. It may seem on face value that is very desirable but it also means that I can tend to push myself to hard sometimes. Compared to a person who is a 4 or 5 who is better at knowing when to stop and take a rest to avoid injury.

Also identified are 4 basic personality types, these are Jewel, Stream, Shaker and Flower; I am a Stream. I won’t go in to all the traits of this type but the description fits my personality. There are many Iridology charts that explain all sorts of things that are indicated in the eyes. As a beginner I plan on sticking to the basics until I learn more.

Many people tend to think of Iridology as some kind of voodoo, however there are some aspects that medical science agrees with. Take the cholesterol ring, this is a kind of smoky ring around the outside of the iris that indicates, you guessed it high cholesterol.

How does it work?

It is not yet fully understood how Iridology works, but the theory is that the iris contains nerve fibres that are connected to various parts of the body through a nerve pathway in the brain. As we experience different things a small marker is left in these nerve fibresHowever it happens, I am a convert and I plan to keep learning as much as I can about this fascinating subject during my studies, so I can use it in my own practice in the future.
