Apple Crumble Muffins

Today’s post is a tasty gluten free Apple Crumble muffin recipe.

This apple muffin recipe was given to us by a colleague. We are not sure where it originated from, but it is easy and the results are delicious.

Apple Crumble Muffins

Ingredients – makes 7
Muffins

200 grams Greek yoghurt

1 egg

50 grams oat flour

30 grams vanilla protein powder

3 tbsp granulated sweetener

1 tsp cinnamon

¾ tsp baking powder

Pinch of salt

130 grams diced apple

Crumble mix

15 grams oats

½ tsp cinnamon

1 tbsp sweetener

10 grams melted butter

 

Method

Preheat oven to 180’C

Combine all muffin ingredients together, folding in diced apple last.

Divide mixture into muffin liners.

Mix the crumble ingredients together

Divide evenly over the top of the batter

Bake for approximately 30 minutes or until skewer comes out clean.

 

Enjoy.

Unfortunately, ours stuck to our papers, but this did not take away from enjoying the muffins.

Lemon Coconut Cheesecake balls

For today’s post I am going to share a recipe for Lemon Coconut Cheesecake Balls.

I found the original recipe in a Women’s Weekly cookbook called ‘The Best of Keto’. So, these treats are keto friendly, low in sugar and gluten free. They contain a good amount of protein and some healthy fats.

I have made a couple of changes to the recipe and it is this version that I am sharing today.

These balls are a great little treat and so easy to make.

Lemon Coconut Cheesecake Balls

Ingredients

Makes up to 18 balls

  • 150 grams(g) firm ricotta
  • 100 g cream cheese
  • 2 tbsp fine lemon zest
  • 2 tbsp lemon juice
  • 40g vanilla protein powder
  • 20g desiccated coconut
  • 1 tbsp melted coconut oil
  • 1 tbsp melted cocoa butter
  • 1 tsp vanilla paste
  • Extra desiccated coconut for rolling
Method

Place all ingredients into a food processor and process till well combined.

To firm up the mixture, put the mixing bowl into the fridge for about 30 minutes.

Put the extra coconut into a small bowl.

Then, using a teaspoon, scoop and roll the mix into balls and then roll them in the coconut.

Place in an air tight container and keep refrigerated till needed.

 **If you like a strong lemon flavour, it may be best to use lemon essence as adding more lemon juice will make the mix very wet.

Oats & Bits Cookies

Today I am sharing a recipe for what I have called Oats & Bits Cookies.

There are some cookies that the supermarket bakery sell that we quite like. However they are not gluten free and are high in sugars, preservatives and so on. So I decided to see if I could make my own homemade variety.

I am sharing the gluten free recipe I came up with. I am calling them Oats & Bits Cookies, as I am certain that you could change up the ‘bits’ or ‘fold in ingredients’ depending on personal preference.

Oats & Bits Cookies

Makes 16-18

Ingredients

2 ¼ cups of oats

1 cup almond flour

½ cup maple syrup

85 gms butter (melted)

pinch of salt

1 tbsp vanilla paste

½ tsp ground cinnamon

¼ tsp ground nutmeg

Bits (or Fold in) Ingredients

40g raisins, currants or dried blueberries

1 tbsp pepitas

1 tbsp choc chips (I used dark, dairy free chips)

Method

Preheat the oven to 180’c and line a baking tray with baking paper.

– Pulse 1¾ cups of the oats in a food processor till they are a fine crumb, then transfer to a large mixing bowl.

– Then add the remaining oats, almond flour, cinnamon, nutmeg and salt to the bowl.

– In another smaller bowl, whisk the vanilla, syrup and butter together.

– When combined, add to the bowl with the dry ingredients and mix well.

– Lastly fold in the raisins, pepitas and choc chips.

– Using a tablespoon, place spoons of the mix onto the tray and press lightly into shape.

Bake for 20 min, or until golden.

Let the cookies cool on the tray for a while before transferring to a wire rack to cool completely.

I think that the beauty of these cookies is that you could add anything from the pantry as a fold in ingredient.

Things like – chopped nuts, chopped dried apricots, your favourite muesli or granola, whatever you fancy.
