A Choc-Orange Slice recipe

Today I’m sharing another recipe, this time featuring Oranges.

At this time of the year our orange trees are full of fruit and I like to find different ways of using it.

What I like about this recipe is that it uses the whole fruit and nothing is wasted. You get every bit of nutrition out of the fruit.

I have previously written about the health benefits of Oranges, of which there are many.

As is usually the way with many fruits, eating an orange is healthier than just drinking the juice. With this recipe, you eat the peel as well, which actually contains higher amounts of some nutrients than the flesh.

This slice is wheat free and almost dairy free (the eggs) and tastes amazing when served a little warm with cream or yoghurt.

 Choc-Orange Slice

Makes 16 pieces

 Ingredients

2 whole organic oranges (about 400gm weight)

4 large eggs

100 gms desiccated coconut

75 gms almond meal

100 gms rapadura sugar

2 tbsp maple syrup (or rice malt syrup)

3 tbsp cacao

2 tsp bi carb soda (or baking powder)

 Method

  • Wash oranges and put them in a large saucepan, covering them with water. (Put a small plate on top of the oranges to stop them floating.)
  • Bring to boil, and then simmer for approximately 40 minutes till the skins have softened.
  • Take the oranges from the water, cut them into quarters and allow to cool.
  • Remove any pips and place the pieces into a food processor.
  • Process till you have a smooth pulp.
  • Add the eggs and maple syrup processing till just mixed.
  • Add the dry ingredients and process till combined.
  • Pour the mixture into a prepared 20 x 20 cm tin and bake at 180* for approx. 1 hr until firm to the touch.
  • Allow the slice to cool a while before removing it from the tin and cutting into squares.

** Variations **

  • If you have a nut allergy you can swap out the almond meal for more coconut.
  • If you don’t want the chocolate, just leave it out.

A bit about Orange peel

Although orange peels are edible, they are not nearly as sweet or as juicy as the pulp.

It may surprise you that the skins have about four times more health benefits than the actual orange fruit that we eat.

Orange peel actually has more fibre than the fruit inside. The pith of the orange — the white part between the skin and fruit — can be sour or bitter but actually contains just as much vitamin C as the fruit itself.

The orange peel contains flavonoids and other phyto-chemicals that are highly beneficial for our health. Flavonoids are antioxidant compounds that help prevent chronic diseases such as cancer and heart diseases.

Orange peels contain several B vitamins, vitamins A and C. In addition, the peel contains considerable amounts of copper, calcium and magnesium.

Also keep in mind, that unless you’re eating peel from an organic orange, it could be covered in chemicals.

Orange and Coconut Cake

Today I’m sharing an Orange and Coconut Cake recipe.

We have so many oranges that we have harvested from our tree, I decided to use some in a cake.

After all, they are very healthy as researched for my last post. This is another way to make use of this lovely fruit.

I have a recipe for a Coconut and Raspberry Loaf that is really delicious, so I thought that it would easily be adapted to use oranges instead. This recipe is also gluten free with the use of Coconut flour.

The result is really yummy. I really like how the zest gives the cake a lovely colour.

 Orange and Coconut Cake

Ingredients

1 cup coconut flour

½ cup desiccated coconut

1 tsp baking powder or bicarbonate of soda

Zest of 1 orange – finely grated and chopped

4 eggs

1 cup buttermilk (or ¾ cup plain yoghurt & ¼ cup milk)

½ cup honey (or other liquid sweetener) I used rice malt syrup

60g butter – melted

2 tsp vanilla extract

1½ cups chopped orange flesh

 Method

* Preheat oven to 170

* Grease and line a loaf tin with baking paper

* Combine coconut flour, desiccated coconut, baking powder and orange zest in a mixing bowl.

* In another bowl, whisk together eggs, buttermilk, butter, honey and vanilla. When well combined, pour the mixture into the bowl of dry ingredients and mix well.

* Fold in the chopped orange flesh.

* Pour the mix into the loaf tin and smooth the top.

Bake for approximately 1 hour or until cooked. Test with a skewer.

Let the cake cool for at least 10 minutes before removing it from the tin onto a rack to cool.

The lesser known benefits of Oranges

Todays post is all about Oranges.

We have an orange tree in our garden and this winter we harvested several buckets of oranges. So for a while, we are able to enjoy some lovely fresh fruit or juice every day.

Most of us are aware that this fruit is an abundant source of vitamin C. The average medium orange will provide an adult with the recommended daily dose.

However, studies in both animals and humans indicate that regular consumption of oranges is associated with various health benefits.

 The other health benefits.

Oranges also contain health-promoting compounds known as flavanones. Research suggests that these flavanones help support the body, protecting it from conditions such as heart disease and cancer. These compounds also have some anti-inflammatory, antiviral and antimicrobial benefits.

One antioxidant compound found in oranges, called hesperidin, may be beneficial in helping to lower high blood pressure and cholesterol. Clinical studies have found that daily intake of orange juice actually has a blood-thinning effect.

This fruit is also a good source of fibre, B vitamins, vitamin A, calcium and potassium. The main fibres found in oranges are pectin, cellulose, hemicellulose and lignin. Studies have also found that these citrus fibres also play a part in decreased blood cholesterol levels.

Oranges, and other fruits of the citrus family, are high in citric acid and citrates, which contribute to the taste. Research indicates that citric acid and citrates from oranges may help prevent kidney stone formation. Both vitamin C and citric acid can increase the absorption of iron from the digestive tract Therefore, when eaten with foods rich in iron, oranges can help reduce the risk of anemia.

Oranges also contain choline, and carotenoids such as lutein and zeaxanthin. Choline is nutrient that helps with sleep, muscle movement, learning and memory. Choline also helps to maintain the structure of cellular membranes, aids in the transmission of nerve impulses, assists in the absorption of fat and reduces chronic inflammation.

 Oranges and the eyes

Lutein and zeaxanthin are carotenoid pigments that give the yellow or orange colour to various foods. Numerous studies have identified these carotenoids to be essential components for eye health.

They constitute the main pigments found in the yellow spot of the human retina, which protect the macula from damage by blue light, improve visual acuity and scavenge harmful reactive oxygen species. Lutein and zeaxanthin have also been linked with reduced risk of age-related macular degeneration and cataracts.

A 15yr study has shown that people who regularly eat oranges are less likely to develop macular degeneration than people who do not eat oranges. Lead Researcher Associate Professor Bamini Gopinath from the University of Sydney said the data showed that flavonoids in oranges appear to help prevent against the eye disease. “Even eating an orange once a week seems to offer significant benefits.”

 Eating oranges is generally healthier than just drinking the juice. One cup of orange juice has a similar amount of natural sugar, as two whole oranges, without the fibre.

Interestingly, the peel actually contains higher amounts of certain nutrients than the flesh, so using recipes that incorporate the zest of an orange will give your diet an extra boost.

I wonder if oranges are going to be called the next ‘super food’?
