Apple Crumble Muffins

Today’s post is a tasty gluten free Apple Crumble muffin recipe.

This apple muffin recipe was given to us by a colleague. We are not sure where it originated from, but it is easy and the results are delicious.

Apple Crumble Muffins

Ingredients – makes 7
Muffins

200 grams Greek yoghurt

1 egg

50 grams oat flour

30 grams vanilla protein powder

3 tbsp granulated sweetener

1 tsp cinnamon

¾ tsp baking powder

Pinch of salt

130 grams diced apple

Crumble mix

15 grams oats

½ tsp cinnamon

1 tbsp sweetener

10 grams melted butter

 

Method

Preheat oven to 180’C

Combine all muffin ingredients together, folding in diced apple last.

Divide mixture into muffin liners.

Mix the crumble ingredients together

Divide evenly over the top of the batter

Bake for approximately 30 minutes or until skewer comes out clean.

 

Enjoy.

Unfortunately, ours stuck to our papers, but this did not take away from enjoying the muffins.

Cheesy Cauliflower Curry, a recipe

Today I’m sharing a favourite recipe – Cheesy Cauliflower Curry.

This last week has been so busy with work and other commitments, I’m glad I got back into meal planning. It was really helpful having meal ideas bookmarked, knowing that all the ingredients were in the fridge and pantry.

The original recipe for this dish comes from a book called ‘The Inspired Vegetarian’, that I received from a very dear friend.

We are still endeavouring to eat more of a plant-based diet. So with that in mind, this is an easy recipe to create and is a repeat winner according to Scott. Though not good for anyone on a ‘dairy free’ diet, it is a very tasty dish and quite filling.

As per his suggestion, I am sharing it with you today.

Cheesy Cauliflower Curry

Serves 4

Ingredients,

1 medium sized Cauliflower, cut into small florets.

1 medium onion, diced

2 eggs, hard-boiled and chopped

3 tbsp plain, gluten free flour

2 tbsp margarine or butter

1 tsp curry powder (I used 2)

2 cups milk

100 g grated cheese

½ tsp thyme (I used fresh thyme)

1 tbsp chopped fresh parsley

2 tbsp of toasted pepitas (or if you prefer – a handful of ‘soup croutons’ )

Method

*Sauté the onion and put aside into an ovenproof dish.

*Steam the cauliflower till just tender. Drain and add to ovenproof dish, mixing with the onion.

*Scatter over chopped egg.

*Put flour, curry powder, butter into a saucepan and mix well.

*Slowly add milk, mixing till the sauce thickens.

*Add chopped herbs and allow to simmer for a minute or two, to allow the flavours to develop.

*Remove from Heat and stir in ¾ of the cheese.

*Pour the sauce over the cauliflower mix and sprinkle with remaining cheese.

*Scatter the pepitas (or croutons) over the top and put the dish in the oven under a hot grill until golden.

 

We ate this as a main meal, however it would also work well as a side dish.

Moroccan style Lamb Shanks with Pumpkin

Today I’m sharing a slow cooker recipe using lamb shanks.
After my last post on slow cooking, I have had a request for an easy, healthy recipe.
So I thought I would share this one for Moroccan style Lamb Shanks with Mashed Pumpkin.

I found this recipe in a Coles magazine and it is really tasty. I made very few changes to it.

Usually I adapt it to feed 2 and that is how I will share it today.

Moroccan Style Lamb Shanks with Mashed Pumpkin

Serves 2 – Cooking time is 8 hours

Ingredients

2 Lamb Shanks
1 400g tin diced tomatoes
½ red onion – sliced
2 garlic cloves – crushed
1 red chilli – sliced or whole (we left the chilli whole and removed it on serving)
2 bay leaves
1 tbs cumin seeds (or ground)
1 tbs coriander seeds (or ground)
juice & zest of 1 lemon

approx. 400g pumpkin – peeled and diced
1 tbs butter
Mint & parsley leaves – chopped to serve

Method

* If you have a large enough pan, you may choose to brown the shanks first, which we didn’t.

Brown the onion in a fry pan, and then add it to the slow cooker.
Place the cumin & coriander seeds in a mortar & pestle and break down into a powder.
Add to the slow cooker, along with the garlic, chilli, lemon, bay leaves and tomatoes.

Stir to combine, and then add the lamb shanks, ensuring to spoon some of the tomato mixture over them.
Cover and cook on low or auto (depending on your cooker) till the meat is starting to fall off the bone.
If the tomato sauce is too thin, leave the lid off your cooker and turn it up to high for approx. 30 minutes till it thickens.

Bake or steam the pumpkin till soft.
Mash well, mixing in butter and season with salt & pepper to taste.

Place the pumpkin mash into bowls and top with lamb mixture.
Sprinkle a mix of chopped parsley and mint to serve.
